Bees visit about 2 million flowers to produce 1 lb. of honey. Wildflowers such as dandelion and clover, black locust and tulip poplar, in spring and early summer, produce lighter color and flavor. Moving into late summer and early fall, bees forage on goldenrod, japanese knotweed, jewelweed, and purple loosestrife, to produce a darker, more full flavored honey.
